Dingle Distillery occupies a picturesque position on the Wild Atlantic Way in County Kerry, and their vodka — five-times distilled from pure grain — reflects something of that landscape's clean, unspoiled character. This is a relatively small operation, and the attention to detail in the spirit is evident.

Five distillations have produced a vodka of considerable purity, with a clean, slightly sweet nose that offers soft grain, a hint of toffee and delicate floral notes. The palate is smooth and creamy, with a gentle sweetness that is characteristic of the best Irish spirits — there is a warmth and generosity here that feels distinctly Celtic.

The grain character is well-defined without being assertive, providing enough flavour to make neat sipping rewarding while remaining sufficiently neutral for mixing. The creaminess is particularly noteworthy — a textured, almost silky mouthfeel that adds to the overall impression of quality.

It's a solid vodka. The nose has with soft grain and toffee and a delicate floral quality, but on the palate the Smooth and creamy doesn't quite deliver the complexity I was hoping for. The clean and warming with a pleasant creamy sweetness is a bit brief. Still enjoyable though — I keep reaching for it when making cocktails rather than sipping neat.

Third bottle in and it just gets better. The nose opens with The five distillations yield impressive purity — I also picked up with soft grain that the review mentions. On the palate, Smooth and creamy is spot on, and there's a with a gentle sweetness and a satisfying grain character that makes this incredibly smooth. The finish closes with Medium to long. This has become my go-to. Makes an incredible Martini too.
